Mint Fudge: The Easiest Gluten-Free Dessert Ever

gluten-free mint fudge
Fudge seems rich and decadent, the kind of special-occasion sweet you might have during the holidays, or on a summer trip to the shore. I couldn’t believe how simple this recipe was and how many raves it elicited. Plus, fudge is the easiest gluten-free dessert ever. It has no flour, no eggs, and no special gluten-free ingredients, so just about anyone can make it for their gluten-free or egg-free guests. My kids love mint, so we made mint chip fudge. But if you’re not a fan of mint, this recipe is very easy to vary. No matter how you make it, you’ll be clamoring for more. Continue reading

The Best Gluten-Free Brownies Ever

brownies, gluten-free

Without a doubt, brownies have to be the best all-around dessert. Rich, dense and fudgy, they satisfy the cravings of any chocoholic. Plus, they’re easy to make for parties, potlucks and holiday get-togethers. Most importantly — at least as far as I’m concerned — they are easy to make gluten-free, especially with this killer recipe for Grandma’s best gluten-free brownies ever. Continue reading

As Sweet as Honey

honey cake, gluten-free
For Rosh Hashanah, the Jewish new year, we greet each other with wishes for a happy and sweet new year. To symbolize sweetness, many families serve honey cake, a traditional Rosh Hashanah dessert. Which, as usual, leaves me searching for a great-tasting gluten-free alternative. Fortunately, this year I made a moist gluten-free, dairy-free honey cake for my honey-child. Continue reading

A is for Apple Cake

Jewish Apple Cake, gluten-free
Shanah Tovah! Best wishes for a happy Rosh Hashanah and a sweet new year. We’re getting this new year off to a tasty start, with a gluten-free version of the traditional Jewish apple cake. Apple cake is a favorite dessert on Rosh Hashanah, when we eat apples dipped in honey to symbolize hopes for a sweet new year. My mother is famous for her Jewish apple cake, laced with apples that she picks from the trees in her back yard. Luckily, Mom’s recipe worked surprisingly well in its gluten-free version. The Last Pie of Summer

strawberry rhubarb crumble

I’ve always been intimidated by pie crust, let alone gluten-free pie crust. So this summer I took a classic strawberry rhubarb pie and turned it into a gluten-free strawberry rhubarb crumble, with no crust and a sweet crisp topping that everyone loves. One quick substitution makes it vegan as well. Easier than pie! Continue reading

Kasha Varnishkes, Gluten-Free

kasha-star

Kasha varnishkes is a traditional Russian-Jewish dish of roasted buckwheat groats tossed with bowtie noodles. Despite its name, buckwheat is not related to wheat, but rather it’s a nutritious, gluten-free whole grain from the rhubarb family. Until recently, there was no gluten-free bowtie or farfalle pasta available. But Le Veneziane’s new gluten-free farfalle pasta from Italy is the perfect ingredient for this satisfying Old Country dish.

Gluten-Free Thin Mint Cookies

gluten-free thin mints

This year was my younger daughter’s first year in Girl Scouts. She sold 48 boxes of Girl Scout cookies with enthusiastic endorsements. But, because she has celiac disease and is gluten-free, she has never, ever tasted a Girl Scout cookie, nor will she. I didn’t want her to be left out, so I developed my own recipe for gluten-free Thin Mints, with a tender gluten-free chocolate cookie enrobed in a minty chocolate coating.

Chinese Corn Egg-Drop Soup

For celiacs, Chinese restaurants are big caution zones, since soy sauce is brewed with wheat. Also, most oyster sauce, hoisin sauce, imitation crab and mock meat substitutes (like mock duck) contain gluten. In our old neighborhood, we were fortunate to find a Chinese restaurant that prepared food without soy sauce for us. When we moved, I wanted to make gluten-free corn egg-drop soup, like we used to have at the restaurant. Here’s our recipe for a velvety egg-drop soup, enhanced by sweet nuggets of corn — gluten-free, of course.
